Lecithin is a naturally occurring compound found in all cells in nature, plant and animal. It plays a major role in almost all biological processes - including nerve transmission, breathing and energy production. The word lecithin is taken from the Greek Lekithos, which means "egg yolk". Nervous (brain, nerves, and spinal chord) and circulatory (in the blood) lecithin is produced by the liver if the diet is adequate. The trouble it that our diet is grossly deficient in phospholipids like that found in lecithin. The phospholipids found in lecithin are needed by every cell in the body and are a key building block of our cell membranes; without it, they will harden and become brittle. Lecithin also protects cells from oxidation. Oxidation is a bad thing - it's what makes nails rust, plastic going from soft to hard, and causes skin wrinkles.... The way I describe this to my clients is that without lecithin, as we age, our brain and skin turns from a soft juicy plum to a hard dry prune.
